I would like to share with you some pictures from my daughter's third birthday. She turned three last month and I made her a unicorn cake. You have probably seen cakes like that on Pinterest and Instagram. They've been popular for sometime now, but I somehow felt a little bit intimidated but them. The thing is I have never worked with fondant before.
That was before I found this recipe on Pinterest. It turned out making it was actually a piece of cake. :) For a basic sponge cake I use this Linda Lomelino's recipe. The easiest frosting is mascarpone + whipped cream + some powdered sugar. Frost the cake and pipe your unicorn's "hair". And then, of course, you gotta make a horn and ears. I decided to make eyes out of fondant as well and then paint them with black gel color. Don't repeat my mistake. The color wouldn't stick and just pour down the fondant. So my unicorn was crying black tears. I somehow managed to save him, I took the fondant out and drew eyes directly on the frosting. Next time I would either pipe the eyes out of frosting or use black fondant.
